Avocado Turkey Wraps

Last one for now! :) Jim stayed home today, and I made these for a healthy lunch that was a change of pace from the usual sandwiches. I changed a few things according to what I had on hand, using deli ham and chicken rather than turkey, banana peppers rather than jalapenos, and leaving out the tomato slices since Jim doesn't like tomatoes, and I didn't have any on hand anyway! These are definitely a make-again recipe. (Also from the Sept./Oct. issue of Quick Cooking.)

2 whole wheat tortillas (8 inches), warmed
2 tablespoons fat-free mayonnaise (we use Hellman's light instead)
1/4 lb. thinly sliced deli turkey (I just used 2 slices of meat per wrap)
8 thin slices tomato
2 teaspoons finely chopped jalapeno pepper
1/4 cup shredded reduced-fat cheddar cheese
2 teaspoons minced fresh cilantro
1/2 medium ripe avocado, peeled and thinly sliced

Spread tortillas with mayonnaise. Top each with turkey, tomato, jalapeno, cheese, cilantro, and avocado. Roll up and cut in half. Yield: 2 servings

Prep/Total time: 15 min.
