This is one of only two tomatoes that grew in our garden this year. Doesn’t it look yummy? Our silly tomato plant went from looking good at first, to then looking like it was going to die a slow and painful death, to producing two tomatoes and then sprouting new growth, upon which is now growing some more teeny tiny green tomatoes. :) We’ll see what happens, if they have time to get ripe before a frost comes!
Anyway, along with our two measly tomatoes, my friend Linda blessed me with a bunch of hers, and I was trying to decide what to do with them. Jim doesn’t like raw tomatoes, and I can only eat so many . . . but I was thinking some kind of small batch of sauce. My mom shared this recipe for roasted tomatoes with me and it was the perfect solution. I roasted them all and when they came out of the oven, I could not resist trying a few spoonfuls straight out of the pan. Seriously delish! Then later I started thinking how very yummy this concoction would taste on pita bread, sprinkled with mozzarella to make a little personal pizza . . . which led to my making some whole wheat pitas, from Tammy’s Recipes, of course! Homemade pita bread is soooo good, way better than storebought! So over the course of this week, I enjoyed several of these:Mmmmmm! Now that I’ve eaten up all my roasted tomatoes, I think I’m going to need to go to the farm and get some more. :)

That tomato looks delish all by itself, but that pizza makes it look amazing! Nice job, I wish I had the patience (or maybe its more like the desire...) to spend that much time in the kitchen.

Our tomatoes did the same sad thing. :( Only one big one harvested so far and a few tiny ones.
