Mrs. T had requested the recipe for the muffins that I made on Saturday. I found these on the Taste of Home website, in the recipe database. I believe they were from Country Extra magazine originally.
Things I liked about these muffins: They were yummy! And they included applesauce as well as butter, and brown sugar rather than white, so I felt they had a "touch" of healthiness to them. :)
Things I didn't like: They were very crumbly! Not a problem if you only have adults in your home, but we ended up with a LOT of crumbs under the table when Sam was eating them. :)
Chocolate Chip Oatmeal Muffins
1/2 cup butter or margarine
3/4 cup packed brown sugar
1 egg
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup applesauce
1 cup rolled oats
1 cup (6 ounces) semisweet chocolate chips
In a large mixing bowl, cream butter and sugar. Beat in egg. Combine dry ingredients; add alternately with applesauce to the creamed mixture. Stir in oats and chips. Fill greased or paper-lined muffin tins 3/4 full. Bake at 350 for 25 minutes.
Yield: 12 muffins

Armed with your comments that these were very crumbly, I decided to try and make them less so. Here's what I did -- used canola oil rather than butter, and used quick-cooking oats rather than regular. I tried one warm and it was not very crumbly at all, but I don't know how it will be after it cools. I froze the rest, so we may not know the answer for awhile, but these are indeed a yummy muffin!
